Vineyard

Single vineyard wine, 100% clone Mendoza. Planted in 2005, in the Gimblett Road sub Region. Pruned to 4 cane VSP. All the grapes used for this wine are grown on a sustainable viticulture approved site.

Vinification

The grapes were gently hand harvested and WBP, oxidatively and straight barrel to ferment for a high solids ferment with wild yeast. Fermentation was conducted warm to give the wild yeast free reign on fruit flavours and texture ferment lasted approximately 3 weeks. Just prior to completing fermentation, the wine was racked off primary solids, but put back to barrel for extended maturation. The wine underwent a wild Malo-Lactic fermentation in barrel, bi-weekly batonage, lees stirring occurred for the 14month length of maturation in Barrel. This wine has received no filtration or fining, a fine deposit may occur with extended cellaring.

Maturation
