Vineyard
Single vineyard based in the cool southerly sub-region of Alexandra, and very importantly cropped at the same low level as Pinot Nor red wine to ensure concentration of flavor on the palate and a long lingering finish.
Vinification
Not a by-product of the red wine winemaking, hand harvested and sorted in the winery, no skin contact, direct press and utilizing the gentle Champagne press cycle. Cold settling and then racked with a bit of lees and fermented in neutral french oak barrels. Fermented bone dry and then 'sur lie' aging with the barrels kicking off the malolactic fermention but just partial to add additional texture and complexity but preserving the fresh precise acidity.
Maturation
Aged in neutral french oak barrel sur lie not for oakiness but for texture before being bottled in the spring.
