Description
Our intent is to have a Pinot Gris that is both not-neutral, very textural with great acidity. The wine comes from a single vineyard in the Alexandra basin.
Champagne pressing of whole clusters and after cold-settling, the wine was racked to 500-liter demi-muid (50%)and stainless steel tank (50%). Fermented long, slow and to dryness, the wine remained on its lees over the course of the winter before being bottled in the spring.
The wine shows ripe orchard fruits with subtle exotic spice and minerality, a rich texture with fresh acidity and a long and lingering finish.
