Vinification
A near perfect growing season allowed our Sauvignon Blanc grapes to reach the optimal balance of ripeness and acidity. The fruit was machine harvested and quickly pressed off skins to preserve the aromatic freshness of the juice. Cool fermentation with selected yeast strains helped to elevate the flavour intensity of both the nose and the palate. A portion underwent fermentation with French oak to add subtle layers of complexity.
