Vinification
A great growing season allowed the fruit to reach desired ripeness prior to harvest. Picked early in the morning, the grapes were quickly carted to the winery and pressed immediately. Clarification allowed the fresh juice to be inoculated with selected yeasts chosen to enhance the flavours seen earlier in the ripe grapes. Cool fermentation was followed by 3 months of aging on lees to add richness and concentration. Careful use of French oak adds subtle layers of complexity.
