Vineyard
Sourced from two high density planted, low yielding vineyards in Marlborough's Southern Valleys
Vinification
Then, the expertise of our winemakers allows the wine to speak for itself. The wine is cold soaked for up to six days, with a portion of this in whole bunches. The warm 28ºC ferment is hand plunged only once every 24 hours at most, before the wine spends another 14 days on skins. Free-run juice and light pressings combine to give the wine richness and structure.
Maturation
Maturation takes place for twelve months in 300L French oak hogshead barrels.
