Selected rows of our E, C Block, and Black Knight vineyards were harvested in the cool of the morning and then gently pressed. The juice was fermented at cool temperatures to retain the intensity of the Sauvignon Blanc aromatics. 10% of the blend was fermented in older French oak barrels. After 7 months on fine lees, the components were blended prior to bottling
