Description
An Opaque ruby colour announces the darker fruits to be found in this wine. Soft yet balanced acidity underpinning the perfume and flavours of black cherry and plum. Medium to full bodied for a Pinot, the palete is plush, gently spiced, and rich in tannins that are velvet smooth. The finish leaves a lasting impression that is gently warming and just a little earthy.

Maturation
gently destemmed, cold soaked 5 days. gentle plunging and occasional pump over. Settled wine with fine lees transferred to new (20%) and seasoned Hogs Heads. Fine lees stirred twice through winter to help protect the un sulphured wine and add volume. Natural spring malolactic fermentation. Blended after 15 months and bottled August 2022.
