Toi Toi Marlborough Sauvignon Blanc 2023
New Zealand, Southern Valleys
Sauvignon Blanc
Description
Vibrantly aromatic with hints of rock melon, crisp apple, sun-ripened apricot, and a touch of fig and lime zest. Wet stone, nettle, and herbal notes of basil and fennel elevate the palate. Intensely fruited yet balanced with a delicate texture and bright acidity. A pure and full expression of Marborough - Tim Adams, Winemaker

Maturation
In the winery the wine is given 2-3 hrs of skin contact and then gently pressed. This helps add structure to the wine and no fining means we retain more of the grape’s natural flavours. The wine is fermented in stainless steel tanks with an array of yeasts; some to enhance aromatics and some to provide savoury notes, weight and structure.
