Vineyard
Bald Hills is a delightful boutique vineyard in the heart of New Zealand’s Pinot Noir country – Bannockburn, Central Otago.
The first plantings began in Spring 1997. Now with 6.5 hectares in Pinot Noir and 1 hectare each in Riesling and Pinot Gris, the Bald Hills vineyard and brand are well established within the Central Otago region.
The fruit for this 'Kirameki' Pinot Gris was hand-harvested on 15 April 2019 (22 brix) from one hectare of sloping pinot gris vines at the northern tip of our vineyard that sit alongside the shimmering rocks, known as 'Kirameki' in Japanese.
Vinification
The fruit was hand harvested on 26th of April 2020 at 23.7 brix and was destemmed and crushed and then pressed to tank for cold settling for two days. The juice was then racked and inoculated with selected wine yeasts and fermented in a stainless steel tank to retain the varietal fruit characteristics. The fermentation was stopped retaining 7.7g/L of residual sugar.
