Vineyard
The grapes are from Georgetown Vineyard at Central Otago, New Zealand.
Vinification
The wine was whole bunch pressed and the resulting juice was inoculated with selected wine yeast.
Maturation
Half of the grapes were whole bunch pressed and half were destemmed and soaked to extract colour and texture. The juice was inoculated with selected wine yeasts then half of the juice was barrel fermented in neutral barrels and half was fermented in tank. The fermentation was stopped retaining 5 g/l of residual sugar.
