The wine has lovely grapefruit pith and a citrus nose. It is very fruit forward and textured as a result of using older oak and long lees maturation.

Osawa Prestige Collection is produced using a variety of fruit parcels from different parts of the vineyard. These wines are a perfect expression of the Osawa vineyard character. Hand-harvested and small, batch fermented, using traditional winemaking techniques.
Making Sauvignon Blanc in Hawke's Bay is all about choosing the right time to pick. Of course, there’s a lot of work done before then, but it’s capturing the grapes when they are at their most intense that really defines what Sauvignon Blanc will taste like.
Typically, Hawke's Bay produces a more lime/citrus aromatic, with some passionfruit. Tending to be less overt in the grassy and green capsicum spectrum, Hawke's Bay Sauvignon Blanc can be more flinty and complex, while never hitting the powerful and exotic intensity of Marlborough. Arguably, Hawke's Bay might be considered more Sancerre like....
Vinification
Crushing/pressing: Hand picked and whole bunch pressed. The juice was run straight to French oak barriques from the press.
Fermentation: 100% barrel fermentation, wild yeast, in seasoned French barriques - one, two and three year aged barrels.
Maturation
Age on lees for 11 months before it is blended and prepared for bottling.
