The wine presents subtle red summer berry, almond and mineral notes with toasty brioche autolysis flavours. Complex with layers of charm, elegance and sophistication. Fine beaded bubble. Dry yet rich balanced mouthfeel with a long silky finish.

Vineyard
All the fruits are sourced from our 8ha. single vineyard; a free-draining terrace perched 15 m above the South bank of the Awatere River. High density planted vines, Guyot double pruning, controlled yield, are the X factors allowing a full aromatic maturity of the grapes. As soon as picked, the fruits are transported in small bins to the onsite gravity fed winery; a guaranty to deliver the fruits in the best possible conditions.
Vinification
Only Pinot Noir from our own vineyard are used to make this Méthode Traditionnelle. The grapes are hand-harvested and whole bunch pressed. After a cold fermentation in stainless steel tanks, the base wine is bottled for its second fermentation. The wine benefits of a good 40 months on lees and a lengthy bottle aging.
Maturation
The wine stays on lees for 40 months before disgorging.
