Vineyard
Sourced from the Howell Vineyard, Bridge Pa. 23 year old vines on red metal soils.
Vinification
100% destemmed, 70 percent crushed. Inoculated with a yeast well suited to Cabernet Franc, fermented in open-top stainless steel vats. Gently pumped over twice daily, then matured for 12 months in French oak.
Maturation
12 months in a mixture of French oak barrels – 13% new, and the balance neutral barrels. All tight grain, medium toast for the new barrel.
