Vineyard
EMMI Méthode Traditionnelle Brut is a cuvee of 75 % Pinot Noir and 25 % Chardonnay made from hand harvested Marlborough Grapes. Derived from our Maybern vineyard above our cellar, these vines are planted to a champagne clone of Pinot Noir on a 30 degree Northwest facing slope. Marlborough's first steep hillside vineyard was planted first by Warwick in 1977. Vines are narrow planted in the European two cane system and dry farmed (non irrigated).
Vinification
Left on its lees for over ten years, EMMI is then hand riddled on Champagne racks from Epernay, with latest desgorgement (removal of the yeast) in June 2023. We are proud to carry out all processes onsite at Johanneshof winery.
