Description
Grapes are destemmed to whole berries and one portion is lightly foot plunged during fermentation. The remaining half of the grapes undergo carbonic fermentation and are not crushed until pressing. The results of this combination are lifted floral characters with a soft mouthfeel. Raspberry leaf aromas, brambles and blueberries.
Two weeks maceration time for a soft and gentle extraction. Pressed into neutral older oak barrels with maturation for seven months.
No additions were done at any stage, including sulphur. The wine is unfiltered and unfined.
