Maturation
The fruit was destemmed and crushed to the press and left for 2 hours of skin contact prior to pressing to a stainless-steel tank. The juice was cold settled for two days then racked and inoculated with selected wine yeast. The cool fermentation was stopped to retain a touch of residual sugar.
