Vineyard
Our aim in the vineyard is to grow the best fruit we can so it can speak of its home and express its personality. To do this you need healthy vines and soil. By practicing organics and incorporating some biodynamic principles we believe we are doing our best to help achieve this and let our vineyards evolve and speak as they would like
Vinification
Harvested at optimal ripeness, this Pinot Noir was fermented in French Oak cuves using native yeast, with a gentle cap management 1-2 times per day. After an average of 3 weeks on skins, the wines were gently pressed to a select mix of French Oak barriques, 20% new. A natural spring malolactic fermentation occurred and after 8 months élevage the wine was racked and gently filtered prior to being bottled in February 2022.
