Vineyard
Made from 5 vineyard blocks: Grove Town, 17 Valley, Cross, Dunrobin, Craiglochart. Combination of climates. Cool maritime.
Vinification
Grapes were selectively harvested and brought straight to the winery. They were gently crushed and pressed and then settled in tank. 1% was run to barrel for wild fermentation, the rest was racked to stainless steel tanks and inoculated with selected yeast strains to promote Sauvignon Blanc specific aromas. Post fermentation the wine was prepared for bottling quickly to preserve freshness. Yeasts: X5 and wild yeast.
Maturation
4-5 months on lees and fine lees.
