Description

Rich and succulent with a mouth-watering texture, this 'wild ferment' has concentrated flavours of ripe pears and quince with a touch of freshly toasted spice. Balanced by a fresh acidity, this is a seamless, memorable wine.

Vineyard

From the Home Block vineyard around the Lawson's Dry Hills winery on Alabama Road where the oldest vines were planted in the early 1980's. These unirrigated vines are deeply rooted in clay soils which help to give the wine weight and body.

Vinification

Picked with a lot of shrivel and a little botrytis, both of which add richness to the wine. Once picked the grapes were gently pressed to French oak barriques and fermented with wild yeast. Fermentation took several months and we stopped it when we felt the wine had achieved optimal balance.
