Vinification
The juice is pressed and cooled in stainless steel for two days before racking and cold fermentation to maximise flavour. Postfermentation lees stirring adds complexity and texture to the wine. A small portion of this wine is fermented in old barrels and blended back into tank.
Maturation
Cold settled over 2 days and racked to tank for fermenting. 2 months on lees before bottling
