Vineyard
After a cool beginning to the season the fruit set was naturally small. Ultimately this led to an enticing ripeness to the fruit as the remainder of the growing season was dry and settled. Organically grown with careful hand-son work to encourage the best shoots and bunches to work in harmony through to harvest. Fruit was harvested in the cool of the morning so it came in cold and could soak some colour out of the skins before pressing and fermentation.
Vinification
021 was a lovely year for Rose, ripe and concentrated fruit, yet with integrated acidity. The harvest started early again and fruit was picked in small lots at optimal timing. Each picking lot was pressed gently and fermented over four weeks before balance was deemed perfect. Varieties were fermented separately in tank and French oak barrels before a three month elevage. Vessels were blended together during winter before bottling on-site without fining.
