The palate is everything you would expect, sweet and luscious, the citrus characters from a sweet marmalade show up again along with deep honeyed notes and a long balanced finish. Tiny production. Vineyard
This wine was made from grapes infected with Noble Rot (Botrytis). The grapes were hand picked at the beginning of winter, well after harvest was completed.
Vinification
On arrival in the winery, the grapes were left them to soak in a small press for 24-hours. The extracted juice was again pumped over the skins and finally lightly pressed. Fermentation took place in stainless steel tank where the wine was aged for several months on light lees.
