Description
Colour: Pale rim graduating to a pale straw core. Shows some viscosity (concentration). Aroma: Oozing delightful aromatics and freshness. Sun-blush apricot, white peach, nougat. Hints of floral such as jasmine or appled blossom. Palate: The palate is lively. Apricot kernel, hints of papaya and spice. There’s a mealy component – which adds complexity. Completely moreish. Well suited to the gastronomic sector.

Vineyard
Terroir: Soil: free draining, fine sandy, silt loam over alluvial gravels. Canopy Management Regime: Vertical Shoot Positioning, North-South Facing rows. Two cane pruning regime. Harvest Method: Hand harvested only when showing physiological ripeness. The bins were loaded into a tank press and whole bunch pressed to avoid extracting the natural phenolics the variety carries.
Vinification
Fermentation: The free run juice was enzyme settled before being racked to ferment in a stainless steel tank and inoculated with Elegance yeast. A cool ferment retained the subtle varietal characters and improves finesse and delicacy. The wine sits on fine lees in a tank for a few months before bottling.
