A staggering concentration with a freshness to match, delicate exotic flavours of fresh lychee and very ripe mango, exquisite notes of turmeric and ginger mixing with cinnamon and saffron, mid-palate reveals citrus hints such as kumquat, grapefruit and kaffir lime. This wine was made from grapes infected with Noble Rot (Botrytis). The grapes were hand picked at the beginning of winter, well after harvest was completed.

On arrival in the winery, Eveline stomped on the bunches with her own feet, left them to soak for 24-hours and then transferred the bunches to a pneumatic press for a gentle press cycle. Fermentation took place in a mix of stainless steel tanks and small French Oak Barriques.
