Fruit 100% destemmed directly to tank for minimal handling. Cold soak for 3 days to enhance colour development, followed by fermentation at cool temperatures in stainless steel tanks. Malolactic fermentation in French oak barrel (in following Spring) to ensure further integration of oak and wine characters.
Maturation
Aged in French oak barrels (40% new) for 12 months
